Ingredients
-2 to 3 red onions
-1 to 2 tsp salt (for drawing out moisture) plus for seasoning later on
-1 cup besan flour (can use chickpea flour)
-3 tbs of rice flour
-Fresh cilantro
-1 to 2 green chiles (Indian green chili or Thai chili are best)
-Knob of freshFresh ginger
-3 garlic cloves
-Cumin seeds
-Carom seeds (or fennel seeds)
-1 tsp Turmeric powder
-½ tsp Kashmiri or red chili powder
-1 tsp Ground coriander
-1 tsp Garam masala

To fry: neutral oil such as sunflower or avocado with a high smoke point
Ideally around 340°F or 171°C
