Blueberry Peach and Pistachio Crisp 🍑 🫐 
Recipe:

Peaches:
5 peach, sliced 1/2 inch thick
2 cups blueberries 
juice of 1 lemon 
3 Tbsp cornstarch
1/2 cup granulated sugar
2 tsp vanilla extract
1/2 tsp kosher salt 
-Add all ingredients to a bowl and mix until well combined. 

Crisp topping:
 3/4 cup light brown sugar
 3/4 cup all purpose flour
3/4 cup old fashioned rolled oats
2/3 cup pistachios, finely chopped
2 tsp ground cinnamon
1/2 tsp ground nutmeg
10 Tbsp unsalted cold butter
2 Tbsp unsalted butter, to grease the pan
-Preheat oven to 350°F.
-Add all ingredients to a bowl and mix until combined and crumbles form. 
-Grease a baking dish with butter. Add the peach and blueberry mixture. Then evenly spread out the crisp topping.
-Bake for 45 minutes, until bubbly and browned. 
-Wait 10 to 15 minutes to serve. Top with vanilla ice cream and enjoy

Mandarin Strawberry Coconut Sorbet 
Recipe:
3 cups frozen mandarin orange slices 
3 cups frozen strawberries 
1 (13.5 oz) unsweetened coconut milk
2-3 Tbsp honey or maple syrup

Oven Baked Harissa and Epis Chicken, served with Tangy Slaw and Herby Roasted Red Pepper Yogurt
Chicken:
salt and pepper 
3 Tbsp Epis 
4 Tbsp Harissa paste
1 tsp paprika 
1 tsp cumin 
1 tsp oregano 
zest of 1 lemon 
juice of 1/2 a lemon 
2 Tbsp avocado oil 
-Remove the backbone from the chicken and cut it down the center to get two pieces. Generously season the chicken with salt and pepper. 
-In a blender or food processor add all remaining ingredients and blend until smooth. Spread the marinade all over the chicken then wrap it and place in the refrigerator to marinate for at least 6 hours or preferably overnight. 
-Preheat oven to 425°F and cook for 35 to 45 minutes, basting every 15 minutes until the thickest part of the breast reaches 165°F.

Slaw:
1/2 medium head of green cabbage, thinly sliced 
1/2 cup cilantro, chopped
1/2 cup scallions, chopped
2 Tbsp red wine vinegar 
2 Tbsp lemon juice
salt to taste 
1 tsp granulated sugar 
5 Tbsp olive oil 
-Add all ingredients to a bowl and mix to combine.

Herby red pepper yogurt:
1 1/2 cups Greek yogurt 
5 roasted red bell peppers in a jar 
6 dill sprigs 
2 scallions, chopped 
1 Tbsp lemon juice 
1 tsp paprika 
1 tsp garlic powder
salt to taste 
-Add all ingredients to a blender or food processor and process until smooth. Once combined season with salt to taste.

Loaded Tuna Pasta Salad

Recipe:
1 box bow tie pasta
24 oz canned tuna, drained and rinsed
5 hardboiled eggs 
3 celery stalks, chopped
1/2 red onion, chopped 
1 red bell pepper, chopped
1/4 cup parsley, chopped
1/4 cup fresh dill, chopped
1 lemon, zested and juiced 
3 garlic cloves, grated
2 cups mayonnaise
3 Tbsp Dijon mustard 
2 Tbsp red wine vinegar 
1 tsp Red pepper flakes 
1 1/2 tsp Old Bay seasoning 
1 tsp salt 
1/2 tsp pepper 
chopped scallions, for topping
paprika, for topping
-Hard boil eggs and place in a water bath with ice, this will make them easier to peel. Peel and chop eggs.
-Chop all vegetables and herbs and place in a large bowl.
-Cook pasta according to package directions. 
-Add all ingredients to the bowl, except pasta, and mix until combined. 
-Add pasta in batches and mix until fully incorporated. 
-Chill in the refrigerator until ready to eat and top with chopped scallions and paprika.
