The other day, we were asked to create a menu, incorporating California Raisins to show their versatility. 

The lunch was at Offbeat, a fairly new restaurant in Makati by Chefs Angelo Comsti and Don Baldosano that focuses on bold Filipino flavors, regional dishes, with a modern sensibility. If you haven’t checked it out, make sure you do! 

Our first course, was inspired by a Kinilaw. So, we used a Seabream, made a coconut cream, and coconut vinegar sauce mixed with a herb oil, for a nice sweet savoury element, we made a sort of California Raisin tapenade, by mixing them with fried capers and sundried tomatoes, all chopped up into a course paste. Finished off with salted egg yolk and crispy rice. 

For the third course, we played around with the steak frites format. Flank steak, served with a layered Potato Pave. For the sauce, we soaked California Raisins in some hot beef broth until plump, we then took them out and cooked down the broth until slightly thicker. We then blended everything with some skin on charred eggplants, to give us this smooth consistency. I now want to bottle this sauce up. 

It was a lot of fun! Hope to do it again.

Kimchi Jjigae is probably one of the most comforting and forgiving Korean dishes to make. I've had it mostly with pork, but I wanted something a little healthier, so I used some Mackerel instead.

Sitaw has to be one of my favorite local vegetables. It seems to always be available, low cal and full of good for you nutrition.

I usually just add them to any kind of ground protein for a quick fix. Like this Beef Pad Kra Pao meets ginisang sitaw. I've added some California Raisins as well, so that i can avoid any added sugar, and their natural sweetness, balances out the heat of the sauce.

•  ½ cup California Raisins 
•  6 dried chilies
•  ½ cup chopped sitaw
•  2 tablespoon vegetable oil
•  12 oz ground beef, regular or lean
•  6 cloves garlic
•  3 Thai chilies, or as many as you can handle
•  1 tablespoon fish sauce
•  juice of 1 lemon
•  1 tbsp oyster sauce
•  1/4 cup beef stock
•  1 cup holy basil or thai basil
•  Cooked Jasmine rice for serving
•  3 eggs, for fried eggs (1 per person)
•  Oil for frying eggs, as needed
