This week marks the end of Fitgreenmind as you know it — and the start of something even bigger. 👀
Fitgreenmind has grown more than I’ve ever imagined, and to lighten my load and make space for exciting new projects, we’re changing things up a bit. My mission remains the same: plant-based food for everyone, just with a little less pressure.😇
I’m no longer just a food blogger. I’m also part of an actual company, a public figure, and a climate activist (and I’ve got a barista mini job hehe 🤭)— roles that demand time and energy I can’t give alone. Thankfully, I don’t have to…
My business partners, Jenny and Kristina, have kept things running behind the scenes and are helping build new projects that will support me — and Fitgreenmind — in the long run. (And don’t worry , they won’t be doing recipe videos!)😉

DON’T THROW AWAY your watermelon rind!🍉

You can use it for so many amazing things like pickles or kimchi OR this delicious stir fry!😋
RECIPE (2 servings, 25min prep time):
-the rind of 1/2 watermelon (about 450-500g)
Peel it and make sure it’s only the white part, not the green.
Slice into thin strips.
-1 Tbsp oil
Fry the rind for 10mins until softened.
-a big piece of ginger, chopped
-2 cloves garlic
-a handful fresh coriander
-1 Tsp cumin
-1/2 Tsp ground coriander
-1/2 Tsp garam masala
Keep stir frying for another 5mins and serve with some rice and tofu or whatever you like.

WIRF DIE WASSERMELONENSCHALE NICHT WEG!🍉 Du kannst sie für so viele tolle Dinge verwenden – z. B. eingelegt wie Pickles oder Kimchi… oder für dieses schmackofatz stir fry!😋
REZEPT (für 2 Portionen, ca. 25 Min. Zubereitung): – Die Schale von 1/2 Wassermelone (ca. 450–500 g) Schälen, sodass nur das weiße übrig bleibt – das Grüne komplett entfernen. In feine Streifen schneiden.
– 1 EL Öl Die Schale für ca. 10 Min. anbraten, bis sie weich wird.
– Ein großes Stück Ingwer, gehackt – 2 Knoblauchzehen – Eine Handvoll frischer Koriander – 1 TL Kreuzkümmel – 1/2 TL gemahlener Koriander – 1/2 TL Garam Masala
Alles zusammen noch ca. 5 Min. weiterbraten. Dazu passt Reis, Tofu oder einfach das, worauf du Lust hast! 🌱

SHAKEN ESPRESSO ☕️

You also wake up to drink coffee? Then make this “brown sugar cinnamon espresso freddo” or I like to call it CINNAMON ROLL FREDDO!🤭
(Yes, I’ve been having that everyday in summer🥹).
RECIPE (1 serving, 5min prep time):
-1 shot of espresso
-1 Tsp brown sugar
-cinnamon
-a pinch of salt
Mix everything in a tall, sealable glass.
-a big handful of ice cubes
Lid on and shake REALLY WELL for 2-3mins.
Serve in a glass, optionally with a milk of your choice and enjoy!😌

Ihr wacht auch nur auf, um Kaffee zu trinken? Dann mach dir diesen „Brown Sugar Cinnamon Espresso Freddo“ – oder wie ich ihn nenne: CINNAMON ROLL FREDDO! 🤭 (Ja, ich trinke den aktuell jeden Tag 🥹)
REZEPT (1 Portion, 5 Min Zubereitungszeit):
* 1 Shot Espresso
* 1 TL brauner Zucker
* Zimt
* eine Prise Salz
Alles in ein hohes, verschließbares Glas geben.
* Eine große Handvoll Eiswürfel dazu Deckel drauf und dann: Schütteln was das Zeug hält (so 2-3 Minuten lang)
In ein Glas füllen, optional mit Pflanzenmilch deiner Wahl genießen 😌

WATERMELON Tu-NAH🍣

Yes, it’s not tuna. Yes, it doesn’t taste like tuna. But it’s a very delicious way to prepare watermelon which you can use for sushi, poke bowls, salads and much more!🤗
RECIPE (4 servings, 2h prep time):
-1 baby watermelon or 1/4 BIG BOIII
Peel and cut in slices.
-5 Tbsp soy sauce
-1 Tsp sesame oil
-optional: crushed nori for a fishy flavor
Mix and marinate for 30mins to 1hour.
Bake at 180C/360F for 60min.
Now slice or cube and toss in the remaining marinade (optional with some garlic and ginger.)

WASSERMELONEN Tu-NAH🍣

Ja, es ist kein Thunfisch. Ja, es schmeckt nicht nach Thunfisch. Aber es ist eine sehr leckere Art, Wassermelone zuzubereiten, die sich für Sushi, Poke Bowls, Salate und vieles mehr eignet!🤗
REZEPT (4 Portionen, 2h Zubereitungszeit):
-1 Babywassermelone Oder 1/4 RIESEN
Schälen und in Scheiben schneiden.
-5 EL Sojasauce
-1 TL Sesamöl
-optional: zerstoßenes Nori für einen fischigen Geschmack
Mischen und 30 Minuten-60min marinieren.
Bei 180 °C 60 Minuten backen.
Jetzt in Scheiben schneiden oder würfeln und mit der restlichen Marinade (optional mit etwas Knoblauch und Ingwer) vermischen.

Don’t like tofu? Try this and then say that again!😜 (Ad)
It’s inspired by the Korean braised tofu “dubu jorim” but I tweaked it a little bit.😎
Btw when ordering at @koro_de you can ALWAYS use my code: fitgreenmind! 🫶
RECIPE (2 servings, 15min prep time):
-250g tofu (use one from the Asian store for best FLAVORRR)
Cut in slices and fry in oil until golden brown.
Sauce:
-3 Tbsp soy sauce
-1 Tbsp vinegar
-1 Tbsp maple syrup (or another sweetener)
-optional add ins: ginger, scallion, garlic, chili and 5 spice
Mix, add to the tofu and let it simmer 5-10mins.
Enjoy with rice and steamed veggies.😋

* 250g Tofu (am besten den aus dem Asialaden – für maximalen FLAVORRR 💯) In Scheiben schneiden und in Öl goldbraun anbraten.
Sauce:
* 3 EL Sojasoße
* 1 EL Essig
* 1 EL Ahornsirup (oder eine andere Süße)
* Optional: Ingwer, Frühlingszwiebel, Knoblauch, Chili & 5-Gewürze-Pulver
Alles vermischen, zum Tofu geben und 5–10 Min köcheln lassen. Mit Reis und gedämpftem Gemüse genießen. 😋

Too hot to cook?🥵 Then join COLD GIRL SUMMER with this delicious Korean noodle dish!😋
RECIPE (2 servings, 15min prep time):
-2 servings of noodles
Cool according to the package instructions.
Soup/sauce:
-150g firm tofu
-1 Tbsp peanut butter
-1 Tbsp roasted sesame seeds
-2 Tsp sugar
-salt to taste
-1 cup (250ml) soy milk or water
Blend until creamy.
To assemble:
-julienned cucumber
-sesame seeds
Serve everything in a bowl and slurp.

🌱 Rezept (für 2 Portionen, ca. 15 Min. Zubereitung):
Nudeln:
* 2 Portionen deiner Lieblingsnudeln Nach Packungsanleitung kochen & kalt abspülen ❄️
Cremige Soja-Soße:
* 150 g fester Tofu
* 1 EL Erdnussbutter 🥜
* 1 EL gerösteter Sesam
* 2 TL Zucker
* Salz nach Geschmack 🧂
* 250 ml Sojamilch oder Wasser ➡️ Alles cremig mixen
Zum Servieren:
* Gurke in feine Streifen schneiden 🥒
* Noch etwas Sesam oben drauf ✨
Alles in eine Schüssel geben, gut durchkühlen lassen & slurpen! 💚

Why buy noodles… if you can have a mental breakdown making them yourself?! 🍜

Okay… I’m exaggerating, actually it’s quite fun and the result are some delicious, thick and chewy noods (just don’t do it when it’s 9pm and you’re hungry).🤭
RECIPE (2 servings, 45min prep time):
-250g flour
-a good pinch of salt
-125 to 140ml water
Knead well for 5mins.
Set the dough aside for at least 30mins.
Roll out thinly on a floured surface and cut into desired shape (you can also skip rolling out and cut them with a scissor).
Cook in salted water until they float to the top.
I served them with:
-2 Tbsp white wine vinegar
-1 Tbsp maple syrup
-1 Tbsp soy sauce
-1 Tsp grated ginger
-a handful chopped cilantro
-2 Tbsp hot oil
Add everything to the cooked noodles and mix well.
Enjoy! ☺️

Warum Nudeln kaufen…. wenn man auch daran verzweifeln kann sie selbst zu machen?!🍜

Okay, vlt übertreibe ich ein bisschen… eigentlich macht’s schon Spaß und am Ende hat man echt leckere, dicke, chewy Nudels (nur vlt nicht machen, wenn ihr schon hungrig seid).🤭
REZEPT (für 2 Portionen, ca. 45 Min. Zubereitungszeit):
* 250g Mehl
* eine gute Prise Salz
* 125–140ml Wasser
Teig ca. 5 Minuten gut durchkneten. Dann mindestens 30 Minuten ruhen lassen. Anschließend auf bemehlter Fläche dünn ausrollen und nach Wunsch in Streifen schneiden (oder einfach mit der Schere schneiden – geht auch! ✂️).
In gesalzenem Wasser kochen, bis sie oben schwimmen.
Ich hab sie so serviert:
* 2 EL Weißweinessig
* 1 EL Ahornsirup
* 1 EL Sojasauce
* 1 TL frisch geriebener Ingwer
* eine Handvoll gehackter Koriander
* 2 EL heißes Öl
Alles zu den gekochten Nudeln geben und gut vermischen.
