Sweet Chili Oxtail Pizza

Sauce:
Canned peeled tomatoes @centofinefoods
Italian seasoning
Garlic powder
Honey
Salt
Oxtail gravy

Freshly made store bought pizza dough (Publix)
Mozzarella, provolone and Parmesan cheeses
Oxtail meat
Sweet chili sauce
Flour (for shaping and stretching dough)

*the pizza @bakingsteel was left in the oven @500 F for 1 hr prior to baking
* leave dough out at room temp for one hour to easily stretch and mold
*no exact measurements

Spicy Gnocchi with Sausage.

2 lbs golden potatoes (salt your boiling water)
1 - 1 1/4 cups 00 (Double zero) Flour or all-purpose
1 large egg
1 tsp salt

1 tube tomato paste (I used the whole tube)
1 pint Heavy cream
1 Small shallot
2-3 Cloves fresh garlic
Italian seasoning
Garlic powder
Salt to taste
Fresh basil
Pasta water
Red pepper flakes

12 oz Italian sausage
Garlic powder
Italian seasoning
Black pepper

* When I rolled my dough into a log, it was Approximately 1 1/2 feet long.

Oxtail Rice & Peas
4.5 lbs oxtails (Good price at Sam’s club)
1 med tomato
1 med yellow onion
3 green onion
fresh thyme (to desired taste)
salt to taste
black pepper to taste
1 scotch bonnet pepper (either slice or leave whole)
1/2 tsp ginger paste (or tsp fresh ginger or powder)
1 tbs garlic paste (or 3 garlic cloves)
1 tsp allspice
2-3 tbs Worcestershire sauce (or soy sauce)
browning & seasoning sauce (as desired
2 bay leaves ( optional)
oxtail seasoning (or all purpose seasoning to desired taste)
2 -3 cups water (may need more)
vegetable oil (or olive)
*trim oxtail fat and I clean and soaked in water and fresh limes
2-3 tbs jerk seasoning
Rice and Peas "cheat":
2 cups white rice
15.5oz (small) can red kidney beans (i only added 1/2 of the can)
2 green onion
3 sprigs thyme
2 tbs butter
1/2 tsp allspice
2 cloves garlic
1 tsp granulated chicken bullion (or 1 chicken bullion cube)
400 ml can coconut milk (I used 1/2 can)
1 cup water (Not 300mL as mentioned in the video, Just use 1 cup)
black pepper (optional)
1/2 scotch bonnet pepper (optional)
Salt to taste

Cabbage:
1 small cabbage head
EVOO
1/2 tsp ground chicken boilion
1/2 red pepper
1/2 green pepper
1 small yellow onion
2 green onion
1 tbs garlic paste (or 2-3 cloves garlic)
1 tsp granulated chicken buollion
fresh thyme
salt and pepper to taste

Seafood Alfredo Bread❗️ Cajun seasoning
Old Bay
Black pepper
1/2 lb shrimp. 1/2 lb langoustines 1/2 lb blue crab
Alfredo sauce :
16 oz Heavy cream
1/2 cup Freshly grated Parmesan cheese
1/2 Stick of butter
2oz Cream cheese
Season with Same dry ingredients plus shrimp bouillon and Italian seasoning

Other:
Loaf of French bread
Garlic butter spread
Cheeses of your choice (I had small pieces in the fridge And shredded some of them. @sargentocheese Red Hot, Smoked Gruyère’, Parmesan And provolone )
Fresh parsley
