Here are the ingredients I used

Camarones a la Diabla…

Sauce:
1tbsp - Olive Oil
6 - Chile Guajillos
20 - Chile de árbol
2 - Tomatoes
1/2 - Onion
5 - Garlic Cloves
2 cups - Water

Blender
Half a small Chile Chipotle (canned)
1/2 cup - Ketchup
1 tbsp - Tomato chicken bouillon
Salt to Taste

Shrimp - 2lbs

This is my all time favorite Pickled Red Onions. Perfect for shrimp tacos, al pastor tacos, carne asada tacos, fish tacos, anything in a taco tacos!

P.S let the onions marinate for at least 2 hrs for best results. Over night even better.

Here are the ingredients I used:
Red Onion
Lime Juice
Habanera
Cilantro
Kosher Salt

5lbs - peeled carrots
1/4 cup - Soy sauce
1 tbsp - Sesame seed oil
1/4 cup - Rice vinegar
3 tbsp - Sesame seeds
3 tbsp - Korean Chili Powder
1 whole package - Chives

Zesty Cauliflower Ceviche: A fresh, tangy twist on a classic ceviche. Vegan approved…. I think. Here is the full recipe. Hope y’all enjoy!

Tostadas de Ceviche de Cauliflower
Ingredients:

Cauliflower, finely chopped - 6 cups
Lime juice - 1 ½ cups
Jalapeños finely diced - 1 ½ cups
Kosher salt - 2 tsp

Cucumber, peeled and diced - 4 cups
Red onion, finely diced - 1 ½ cups
Shredded carrots - 2 cups
Tomato, diced - 1 1/2 cups
Cilantro, chopped - ½ cup
Kosher salt - to taste

Tostadas - for serving

Instructions:

Step 1: In a large bowl, combine cauliflower, jalapeños, lime juice, and 2 tsp kosher salt. Mix well to ensure the cauliflower is evenly coated. Cover and let marinate in the refrigerator for 1 hour

Step 2. After marinating combine and mix in all the ingredients together. Add salt to taste, mix and enjoy on some tostadas.
