Ingredients:

* 2 cups fresh spinach leaves
* 1 cup cherry tomatoes
* 1 cup sliced mushrooms (like champignons)
* 200 g ricotta cheese
* 3 garlic cloves (whole, unpeeled)
* 2 tbsp olive oil
* Salt, to taste
* Italian seasoning or your favorite spices
* Fresh herbs (like parsley or basil), chopped
* 200 g cooked pasta (penne, fusilli, or your choice)
* Grated Parmesan cheese, for topping

Instructions:

1. Preheat the oven to 180°C (350°F).
2. In a baking dish, add spinach leaves, cherry tomatoes, sliced mushrooms, and ricotta.
3. Season with salt, spices, and chopped herbs. Drizzle with olive oil and add the garlic cloves.
4. Bake for 20–25 minutes until veggies are soft and the ricotta is slightly golden.
5. Remove from the oven, mash the mixture with a fork until creamy and well-blended.
6. Add the cooked pasta, stir to combine evenly.

* 3–4 large tortillas
* 3 eggs (or ready-made omelette mix)
* Slices of your favorite cheese (e.g., cheddar, mozzarella)
* Grated cheese, for topping
* 1 egg yolk, for brushing
* Fresh basil leaves, chopped

Instructions:

1. Pour the omelette mixture into a heated skillet.
2. Place one tortilla on top of the omelette layer.
3. Add slices of cheese over the tortilla.
4. Cover with another tortilla, add a different type of cheese slices on top.
5. Repeat: add another tortilla, more cheese slices, then finish with one last tortilla on top.
6. Brush the top tortilla with egg yolk.
7. Carefully flip the whole stack in the skillet to cook the other side.
8. Sprinkle grated cheese over the top and crumble fresh basil leaves.

What You’ll Need:
 • 400 g cherry tomatoes
 • 2 whole heads of garlic
 • 3–4 tbsp olive oil
 • Salt, as preferred
 • 50 g finely grated Parmesan
 • 300 g spaghetti, cooked until al dente
 • A handful of fresh arugula
 • Extra cherry tomatoes, for decoration (optional)

How to Make It:
 1. Preheat the oven to 200°C (390°F).
 2. Arrange the cherry tomatoes and halved garlic heads (cut horizontally) in a baking dish.
 3. Drizzle generously with olive oil and season with salt.
 4. Roast for 25–30 minutes until the tomatoes are blistered and the garlic turns soft and golden.
 5. Allow to cool a little, then squeeze the garlic cloves from their skins.
 6. Transfer the roasted garlic and tomatoes to a blender or food processor. Add Parmesan and blend until creamy.
 7. Toss the cooked spaghetti with the sauce in a large bowl until evenly coated.
 8. Plate up, garnish with fresh arugula and extra cherry tomatoes if desired. 😋🫶🏼
