Healthy Cereals at home 🤩

Ingredients:
1. 2 cups cooked rice (cooled)
2. 1 cup oats flour
3. 1/4 cup unsweetened cocoa powder
4. 1/4 cup maple syrup
5. 1 teaspoon vanilla extract

Instructions:
	1.	Preheat your oven to 180°C (350°F). Line a baking tray with parchment paper.
	2.	In a food processor, add: Cooked rice, Oats flour, Cocoa powder, Maple syrup and Vanilla extract
	3.	Blend the mixture until it forms a thick, sticky dough. Scrape down the sides as needed to combine everything evenly.
	4.	Using your hands, roll the dough into small bite-sized balls (you can also shape them like tiny patties if you prefer crunchier edges).
	5.	Place the balls onto the prepared baking sheet, leaving a little space between each.
	6.	Bake at 180°C for 30–40 minutes, or until they are firm and slightly crisp on the outside.
	7.	Let them cool completely before storing in an airtight container.

Homemade Cinnamon Rolls

📝 Ingredients

For the Dough:
	•	1/4 cup warm water
	•	1/2 cup warm milk
	•	1 teaspoon sugar (for activating yeast)
	•	2 and 1/2 teaspoons active dry yeast
	•	3 cups all-purpose flour
	•	1/2 teaspoon salt
	•	4 tablespoons butter (softened or melted)
	•	1 egg
👉 Or replace with 3 tablespoons milk or 1/4 cup yogurt for an eggless version
	•	4 tablespoons sugar
For the Cinnamon Filling:
	•	1/2 cup brown sugar
	•	1 and 1/2 teaspoons cinnamon powder
	•	4 tablespoons butter (softened)
For the Glaze:
	•	1/2 cup powdered sugar
	•	1 to 2 tablespoons water (adjust for desired thickness)
🔄 Method
1. In a bowl, mix: 1/4 cup warm water, 1/2 cup warm milk, 1 teaspoon sugar, 2 and 1/2 teaspoons yeast.
2. Stir and let it sit for 8–10 minutes, until foamy.
3. In a large mixing bowl, combine, 3 cups flour, 1/2 teaspoon salt, 4 tablespoons sugar.
4. Add: The yeast mixture, 4 tablespoons butter, 1 egg (or egg replacement as above), Knead the dough until smooth and elastic (8–10 minutes by hand or 5 minutes with a dough hook).
5. Cover and let rise in a warm spot for 1 to 1.5 hours, or until doubled in size.
6. Prepare the Filling - Mix together: 1/2 cup brown sugar, 1 and 1/2 teaspoons cinnamon, 4 tablespoons softened butter. Stir until you get a smooth, spreadable paste.
7. Roll out the dough into a rectangle (around 12x15 inches). Spread the cinnamon filling paste evenly over the dough surface. Roll tightly from the long edge to form a log.
8. Cut into 16 equal pieces using a sharp knife or unflavored dental floss.
9. Arrange rolls in a greased baking dish, slightly spaced apart. Cover and let rise again for 30–40 minutes, or until visibly puffed.
10. Preheat oven to 180°C (350°F). Bake the rolls for 18–20 minutes, or until lightly golden and the centers are cooked.
11. Make and Add the Glaze - Mix 1/2 cup powdered sugar with 1–2 tablespoons water to make a pourable glaze. Once rolls are slightly cooled, drizzle the glaze generously over the top.

Why eat basic sabudana when you can make hara bhara sabudana. 🥰

Hara Bhara Sabudana - 
1. Sabudana 1 cup
2. Water 1 cup
3. Peanuts 1/2 cup
4. Boiled potato 2 
5. Ghee 2 tsp
6. Cumin seeds 2 tsp
7. Green chilli 1
8. Sugar 1 tsp

For chutney - 
1. mint handful 
2. Coriander leaves handful 
3. Salt 1 tsp
4. Lime juice 1/2 

- wash and soak sabudana for at least 6 hours.
- In a pan roast peanuts until the skin starts to release.
- Transfer the peanuts to a kitchen towel and remove the skin. Transfer to a mixer and grind it.
- For chutney transfer coriander, mint, salt and lime juice to a blender and blend it.
- Now heat a pan, add ghee. Add peanuts and fry ot for 3-4 minutes. Add cumin seeds, green chillies and fry for few seconds.
- Add boiled potatoes and mix. Add prepared chutney and sabudana, mix well.
- Add 1 tsp sugar and give it a mix.
- cover the khichdi for 3 mins on low heat.
- Mix and serve.

Easy Sooji Handvo

📝 Ingredients:

For the Batter:
	•	1 cup semolina (sooji)
	•	1/2 cup curd (dahi)
	•	1 teaspoon salt (adjust to taste)
	•	Little water (as needed for thick batter)
	•	½ cup grated lauki (bottle gourd)
	•	½ cup grated carrot
	•	1 teaspoon turmeric powder
	•	1 teaspoon grated ginger
	•	1 teaspoon fruit salt (Eno)
	•	1–2 tablespoons water (to activate Eno)

For Tempering:
	•	1–2 tablespoons oil
	•	1 teaspoon mustard seeds
	•	1 teaspoon sesame seeds
	•	A few curry leaves

👩‍🍳 Instructions:
	1.	Prepare the Batter:
	•	In a mixing bowl, combine semolina, curd, salt, and just enough water to make a thick batter.
	•	Let it rest for 10–15 minutes.
	•	Add grated lauki, carrot, turmeric powder, and grated ginger. Mix well.
	2.	Add Fruit Salt:
	•	Just before cooking, sprinkle fruit salt (Eno) on top and pour a spoonful of water over it.
	•	Once it foams up, gently fold it into the batter.
	3.	Tempering:
	•	Heat oil in a heavy-bottomed kadhai or non-stick pan.
	•	Add mustard seeds; let them splutter.
	•	Add sesame seeds and curry leaves; sauté for a few seconds.
	4.	Cooking the Handvo:
	•	Pour the batter into the pan over the tempering.
	•	Cover with a lid and cook on low-medium heat for about 10–12 minutes, or until the bottom is golden and firm.
	•	Flip carefully (if you’re able), or cook uncovered till the top sets completely.
	5.	Serve:
	•	Cut into pieces and serve hot with green chutney, sweet chutney, or curd.

Stuffed Dosa Sandwich 

Crispy outside, cheesy-spiced stuffing inside — this fusion dosa sandwich is a game-changer!

🧺 Ingredients:

✅ For the Filling:
	•	1/2 cup finely chopped capsicum
	•	1/2 cup finely chopped onion
	•	1/2 cup crumbled paneer
	•	2 cubes processed cheese, grated (or as per taste)

🌿 Spices:
	•	1/2 tsp salt (or to taste)
	•	1/4 tsp black pepper
	•	1/4 tsp oregano
	•	1/4 tsp red chili flakes
	•	1/4 tsp garlic powder (or 1 clove fresh garlic, finely chopped)

✅ For the Outer Layer:
	•	Dosa batter (about 1 to 1.5 cups)
	•	Oil or ghee for greasing

1. Prepare the Stuffing
	•	In a bowl, combine capsicum, onion, paneer, and grated cheese.
	•	Add salt, pepper, oregano, chili flakes, and garlic powder.
	•	Mix everything well. Keep aside.

	•	Heat your lined sandwich maker (the one with the ridged plates).
	•	Lightly grease it with oil or ghee.

3. Assemble the Sandwich
	•	Pour a layer of dosa batter onto the lower plate, just enough to coat the surface.
	•	Spread the stuffing evenly over the batter.
	•	Pour another thin layer of dosa batter to cover the filling.

4. Cook
	•	Close the sandwich maker gently.
	•	Let it cook for 5–7 minutes, or until the outer layer turns golden and crisp.
	•	(Timing may vary based on your sandwich maker.)

5. Serve
	•	Open the sandwich maker and carefully remove the dosa sandwiches.
	•	Cut into triangles or squares.
	•	Serve hot with green chutney, tomato ketchup, or coconut chutney.

Ice Cream but make it protein rich and filled with antioxidants 🥰

Yogurt Ice Cream
1. Hung curd (made with 500g curd)
2. Honey 2 tbsp
3. Frozen or fresh strawberries 1 cup
4. Sugar 1 tbsp
5. Milk chocolate 1 cup
6. Oil 1 tsp

- in a pan heat strawberry with sugar. Mix it until it becomes smooth and little dry.
- Turn off the heat and let it cool completely.
- In a bowl, take hung curd, add honey and strawberries mixture. Mix it gently.
- Transfer it to an ice cream mould.
- Freeze it for at least 8 hours.
- Dip it in chocolate and enjoy!

What’s yours?

Pizza
1. Lukewarm water 370 ml
2. Sugar 1 tsp
3. Active dry yeast 2g
4. Flour/maida 460g
5. Semolina/sooji 25g
6. Vital wheat gluten 12g
7. salt 1 tsp
8. Pizza sauce 1 tbsp
9. Mozzarella cheese handful
10. Olives 6-8
11. Sun dried tomatoes 4-5
12. Basil 

- Take lukewarm water in a bowl, add sugar and yeast to it. Mix it well.
- Now add flour, semolina, gluten and salt to it. Knead a soft dough.
- Cover it and let it proof for 30-40 mins.
- Transfer it to the kitchen platform and divide it into 3 equal portions.
- Take each portion and tuck it properly so that it becomes smooth. Place all 3 doughs in separate containers. Cover them and let it proof for 1 hour 30 mins.
- Preheat the oven at the highest temperature for 30 mins.
- Take a plate or round wooden board, spread semolina on it, now take out the dough and spread it like a pizza, thin in the centre and thick on the sides.
- Now spread the pizza sauce and cheese and toppings.
- Transfer it to the oven gently and cook on highest temperature for 10-12 mins.
