Peanut butter cheesecake ice cream 🍨 🤯 Follow @lainiecooks_ for more healthy recipes ideas! I’m actually freaking out that you can make the creamiest ice cream that tastes like straight up cheesecake ice cream but is actually good for you and LOADED with protein. The star ingredient? WHOLE MILK COTTAGE CHEESE. If you think you don’t like cottage cheese, this will still win you over. I need to make other flavors asap… Hit me with some flavors ideas in the comments! Ingredients: 1 container of @good_culture whole milk cottage cheese 1/4 cup or more sweetener of your choice (I like to use raw honey or date syrup) 1-2 tbsp of natural peanut butter 1/2 cup chocolate chips Instructions: Using a high powered blender, food processor, or immersion blender, add cottage cheese and sweetener and blend until it’s silky smooth. Add in peanut butter and chocolate chips. Make swirls using a spoon and place it back into container. Top with more peanut butter and chocolate chips. Freeze for a few hours and enjoy! PRO TIP: to make sure it does not turn icy, stir every hour or so while in freezer and don’t freeze longer than 4-5 hours. #cottagecheese #cottagecheeseicecream #proteinicecream #glutenfree #highprotein #healthyicecream #dessertideas

Elote Chicken Pasta Salad ☀️
gluten-free + high-protein meal. The perfect summer meal prep or recipe to bring to a gathering! 

Ingredients:
  •  16 oz @jovialfoods gluten-free pasta (1 full box) – 100% organic & made in Italy ❤
  •  4 cups fire-roasted corn
  •  3 cups grilled chicken, chopped
  •  1 red onion, finely diced
  •  ¼ cup diced jalapeños (or more if you like it spicy)
  •  ¾ cup fresh cilantro, chopped
  •  1 cup crumbled cotija cheese

Dressing:
  •  ½ cup plain Greek yogurt
  •  ½ cup mayo
  •  2 tbsp olive oil
  •  2 tsp chili powder
  •  ¾ tsp garlic powder
  •  ½ tsp ground cumin
  •  Juice of 2 limes
  •  1 tsp Salt & pepper to taste
  •  Optional: 1–2 tsp honey or maple syrup for balance

Instructions:
  1.  Cook pasta according to package, rinse under cold water, and let cool.
  2.  In a large bowl, combine pasta, corn, chicken, onion, jalapeños, cilantro, and cotija.
  3.  Whisk together all dressing ingredients and adjust to taste.
  4.  Toss salad with dressing until evenly coated.
  5.  Top with more cotija + a sprinkle of Tajín if you’d like.

Dairy free strawberry soft serve 🍦 🍓 protein and fiber rich, and refined sugar free! Follow @lainiecooks_ for more! Ingredients: 1 can light coconut milk 1/4 cup freeze dried strawberries 3/4 cup fresh strawberries 3 tbsp pure maple syrup 1/4 cup vanilla protein powder (or 2 packets vanilla @feelingperdi) Instructions: wash and chop your strawberries. To a blender combine coconut milk, fresh strawberries, freeze dried strawberries, vanilla protein, maple syrup and blend until smooth. Pour the mixture into ninja creami pints and freeze for 24 hours. When you’re ready to eat, add it to your creami and run the soft serve and ice cream setting. If it looks too powdery or dense add a splash of milk and re-spin. Scoop or swirl into a cone and enjoy immediately. #strawberrys #strawberries #strawberryicecream #ninjacreami #ninjacreamirecipes
